Boiling water risks drawing bitterness from the green tea and dulling the delicate peach and rose notes that give this blend its character. Aim for water at around 85°C — just off the boil, or boiled and left to stand for two to three minutes — and steep for 3 to 4 minutes. For a lighter, more floral result, steep closer to 3 minutes; for a fuller, more rounded cup, push gently to 4.
