The black teas — Dubliners Irish Breakfast, Assam Mangalam, Cinnamon Flavoured Black Tea, Orange with Zests, Baroness Grey, and Christmas Cookie — all brew well with freshly boiled water and a steep of 3 to 4 minutes; the Baroness Grey benefits from water just off the boil at around 95°C to protect its more delicate character. The Indian Mocha Chai is excellent made strong with a 4 to 5 minute steep, with milk added to taste.
