Its name comes from the ancient Greek for 'ground apple' — and when you brew it, that quiet apple-like sweetness in the aroma makes the etymology feel entirely fitting. The mint in this blend is Kentish mint — a distinction worth noting. Brewing Note: For the best cup, use freshly boiled water at 100°C and steep for 5 to 7 minutes — a little longer than you might expect, but chamomile and mint both benefit from the time. Use a generous pinch of the blend per cup, around a heaped teaspoon, and cover the cup or teapot while it brews to keep the aromatic oils from escaping with the steam. The resulting infusion is naturally sweet and needs no sugar, though a small spoonful of honey is a pleasant addition if you prefer a little more warmth. For an iced version, brew slightly stronger, allow to cool, then pour over ice — the mint becomes particularly bright and refreshing when chilled.
