From the Cederberg Mountains

Rooibos grows in only one place on earth. The Aspalathus linearis plant — a member of the legume family, and the only one of 278 Aspalathus species cultivated for tea — is endemic to the Cederberg mountain region of South Africa's Western Cape. Every gram of rooibos produced anywhere in the world originates from this relatively small, rugged highland area, and the EU's Protected Designation of Origin rules confirm that status officially. After harvesting, the needle-like leaves are bruised, moistened and allowed to oxidise — a process that creates the distinctive earthy-red colour and the smooth, naturally sweet character that has made rooibos so popular worldwide. The unoxidised green version skips that step entirely, producing a lighter, more herbaceous result that is quite different in character from the classic red style.

Flavour and Character

Three teas show the range within this collection clearly. Cederberg Organic Rooibos is the classic starting point: fully oxidised in the traditional way, it produces a warm golden-copper cup with an earthy smoothness and a naturally rounded, slightly vanilla-like sweetness — gentle enough to enjoy with milk, a twist of lemon or simply on its own. Green Organic Rooibos offers a striking contrast: dried immediately after harvest without oxidation, the resulting brew is lighter, fresher and more herbaceous, with a lively, slightly tangy and malty quality that feels quite distinct from the classic red style. East Cape Organic Honeybush is closely related to rooibos but botanically separate — carrying a naturally sweeter, honey-scented character that makes it one of the most accessible and fragrant caffeine-free infusions available.

Brewing Rooibos

Rooibos is one of the most forgiving infusions to brew. Use freshly boiled water and steep for five to seven minutes — unlike green tea, rooibos does not become bitter if left a little longer, which makes it especially easy to enjoy at any pace. Cederberg Organic works beautifully with milk and a little honey, or with a slice of lemon for a brighter cup. Green Rooibos is best brewed slightly shorter — around four to five minutes — and enjoyed without milk, where its fresher, lighter character comes through most clearly. Honeybush is equally unfussy; five to six minutes, and its natural sweetness means it rarely needs anything added.

The collection also includes Earl Grey Rooibos for a bergamot-scented caffeine-free alternative to classic Earl Grey, and Lemon and Ginger Rooibos for a spiced, citrus-lifted cup with the warmth of real ginger root. All work beautifully as an iced tea — a traditional South African serving style that suits rooibos particularly well.
