Boysenberry Fruit Infusion is a rich, fragrant loose leaf fruit tea built around one of the most distinctive berries in the world. The boysenberry itself is a hybrid fruit — a carefully cultivated cross between blackberry, loganberry and raspberry — and it brings to this infusion a depth of flavour that is immediately noticeable: dark, smooth, full-bodied and naturally sweet, with a beautifully heady wild berry aroma that fills the cup from the first steep.
New Zealand is today the world's leading producer of boysenberries, cultivating the fruit on a commercial scale for jams, juices and, increasingly, for tea. The berry's appeal lies in its balance: it has the jammy richness of blackberry without the sharpness, and a gentle raspberry note that keeps the flavour bright and rounded. Ingredients: Boysenberry pieces, hibiscus, rosehip, apple pieces, natural boysenberry flavouring.
Brewing Note: Use freshly boiled water at 100°C and add one heaped teaspoon of fruit infusion per cup. Steep for 5 to 7 minutes — longer than you might steep a standard tea — to allow the fruit pieces to fully open and release their flavour. The longer you leave it, the deeper and more jammy the cup becomes, so it is worth experimenting to find your preferred strength. For an iced version, brew a double-strength pot using two heaped teaspoons, steep for 7 minutes, then pour directly over ice and allow to cool. The flavour holds exceptionally well chilled and needs no sweetening.
