A superb Chai from the South Indian city of Cochin. The chai has notes of cardamom and ginger and combines a mix of coconut, ground red chilies, dal coriander and turmeric. Traditionally this chai would be brewed using milk instead of water. If you prefer it can be created by brewing your tea in the usual fashion and adding warm milk. A traditional and popular drink throughout India.
