Brewing Note: Ginger and peach black tea brews best with freshly boiled water at around 95°C — pour it over the leaves and steep for 3 to 4 minutes for a bright, balanced cup. A slightly longer steep of 4 to 5 minutes will bring the ginger more prominently forward if you prefer a little more warmth. This tea takes milk well if that is your preference, though it is equally enjoyable black, where the peach sweetness comes through most clearly. For a cold brew, add a generous measure of loose leaf to cold water and leave in the fridge for 6 to 8 hours — the result is a smooth, naturally sweet iced tea that needs nothing added to it.
