Pai Mu Dan, also known as White Peony, is made from young tea buds and tender leaves that are gently withered and dried with minimal intervention. This careful handling preserves the tea’s pale liquor, soft floral quality and naturally smooth texture.

How to Brew White Earl Grey Loose Leaf Tea

Use water cooled slightly after boiling, ideally around 80°C to 85°C. Add one heaped teaspoon per cup and steep for 3 to 4 minutes.

The shorter end of the brewing time gives the most refined balance between white tea sweetness and bergamot aroma. A second infusion is well worth trying, as the citrus softens and the underlying white tea character becomes more prominent.
