How to Brew Bai Mao Hou White Monkey
Use water at around 75°C to 85°C and add approximately 2 to 3g of leaf per 250ml. Steep for 2 to 3 minutes for the first infusion.
The leaves are well worth infusing again. A second and third brew will be lighter and softer, often revealing a particularly pleasing sweetness as the leaf continues to open.
