This is an Earl Grey created with breakfast in mind: robust enough to stand alongside toast, pastries or a fuller morning meal, while still offering the fragrant elegance that makes bergamot tea so enduringly popular.
It also works well as an iced tea. Brewed strong and poured over ice, the black tea base retains its shape and the bergamot remains bright and aromatic.
How to Brew Breakfast Earl Grey
Use water at around 95°C to 100°C and add one heaped teaspoon per cup. Steep for 3 to 4 minutes for a balanced, aromatic brew.
For a stronger cup, extend to around 5 minutes. If adding milk, a 3-minute infusion keeps the bergamot brighter and more forward.
For iced tea, brew double strength, allow it to cool briefly, then pour directly over ice.
