As a general guide:

  • Black teas such as Rwanda Rukeri, Earl Grey Reserve and Prince of Wales Blend: use near-boiling water and steep for around 3 to 4 minutes.
  • Green teas such as Green Mao Feng “Long March”: use cooler water, around 75°C to 85°C, and steep for 2 to 3 minutes.
  • White tea such as Pai Mu Dan: use water around 80°C to 85°C and steep for 3 to 4 minutes.
  • Oolong such as Vietnam Tung Ting: use water around 85°C to 90°C and steep for 2 to 3 minutes, with further infusions well worth trying.
  • Herbal, fruit and rooibos infusions: use boiling water and allow 5 to 10 minutes depending on the blend.
  • Cochin Masala Chai can be brewed as a strong infusion or simmered more traditionally with milk and water for a richer cup.

I am no tea snob, but the tea I got sent was bad. Zero fragrance, the prince of wales tastes like grass and cardboard. Maybe just an old sample box? The only bag that somehow smells of something is the berry one.
