How to Brew Vietnam Tung Ting Oolong
Use water at around 85°C to 90°C and add one teaspoon of leaf per cup. Steep for 2 to 3 minutes for the first infusion.
A brief rinse before the first brew is worthwhile: add a small amount of hot water, swirl gently, then discard after a few seconds to help the rolled leaves begin opening evenly.
The leaves will give at least two further good infusions, with the second cup often especially rewarding as the tea becomes fuller and more expressive.
