Brewing Note: Blue Lady is straightforward to brew and forgiving to make well. Use one heaped teaspoon per cup and pour water that has just reached the boil — around 95 to 100°C. Steep for 3 to 4 minutes for a lighter, more delicately citrusy cup, or up to 5 minutes if you prefer a fuller-bodied result. The grapefruit note softens slightly with longer steeping, allowing the China black base to come through more.
