Chamomile and lavender have been used together for centuries, and for good reason. Both are among the most celebrated calming botanicals in the world, and when combined in a loose leaf herbal infusion, they produce a cup that is as soothing to breathe in as it is to drink. This chamomile lavender infusion draws on two exceptional sources: Egyptian chamomile, long considered the finest available, and lavender from the Provence region of southern France, where the warm climate and aromatic hillsides produce flowers of outstanding fragrance and quality.

Chamomile has been revered since antiquity. The ancient Egyptians considered it sacred and incorporated it into their rituals and remedies, and both Greek and Roman physicians recommended it widely. The Greeks named it from their words for ground and apple — a reference to the flower's characteristic warm, apple-like sweetness. Egyptian chamomile is prized today for the quality of its full flower heads, which brew into a cup noticeably richer and more fragrant than commercial varieties. Lavender brings its own distinguished history. The Romans added it to their bathing water — its name comes from the Latin lavare, to wash — and its calming properties have been valued by herbalists throughout Europe for over two thousand years. Lavender from Provence, grown in the elevated, sun-drenched fields of southern France, is regarded as the finest in the world for both fragrance and flavour.

The result is a loose leaf herbal infusion of considerable elegance. Ingredients: Egyptian chamomile, Provence lavender.

Brewing Note: Use freshly boiled water at around 100°C and one heaped teaspoon of the blend per cup. Steep for 5 to 7 minutes, covered if possible, to keep the aromatic oils from escaping with the steam. The colour will develop into a clear warm gold. There is no bitterness to worry about, so steep to your own preference — a shorter time gives a lighter, more delicate cup, while a longer steep brings out more of the chamomile's natural sweetness. Enjoy as it is, or with a small spoonful of honey if you like a little extra warmth. This infusion also works beautifully as a cold brew: steep a generous amount in cold water for several hours and serve over ice.
