Chamomile herbal tea is one of the oldest and best-loved herbal infusions in the world, and for good reason. Its name comes from the ancient Greek khamaimēlon — meaning ground apple — a reference to the gentle, apple-like sweetness that rises from the cup. Chamomile has been valued for thousands of years, revered in ancient Egypt, prescribed by Greek and Roman physicians, and used throughout medieval Europe as one of the most trusted plants in the household herbalist's repertoire. This is a caffeine-free herbal infusion with a history as rich as its flavour.

The flowers used here are the finest grade available — small, handpicked blooms selected for their sweetness, fragrance, and that characteristic soft gold colour. Presented in pyramid bags, they have space to infuse fully, releasing the essential oils that give chamomile its warmth, its floral character, and its naturally calming quality. Brewing Note: Chamomile is at its best when given a little room to breathe. Place a pyramid bag in your mug and pour freshly boiled water — 100°C — directly over it. Allow it to steep for 5 to 7 minutes with a saucer placed over the top to hold in the steam and fragrance. The longer you leave it, the more pronounced the apple-honey character becomes. Remove the bag gently without squeezing, and serve as it is or with a small spoonful of honey. For an evening ritual, try it made slightly stronger with a 8 to 10 minute steep — warming, soft, and quietly settling.
