Best Enjoyed Without Milk

It is an excellent afternoon tea for those who appreciate fine Darjeeling, especially when there is time to drink it slowly and notice how the flavour develops as the cup cools.
How to Brew Happy Valley Second Flush Darjeeling
Use freshly drawn water cooled slightly after boiling, ideally around 90°C to 95°C. Add one level teaspoon per cup and steep for 3 to 4 minutes.
A 3-minute brew gives a brighter, fruitier cup. Extending to 5 minutes brings a little more structure and grip, while still preserving the tea’s refined second flush character.
Serve without milk. A second infusion is well worth trying with a slightly shorter steep.
