Decaf Irish breakfast tea is one of the most genuinely useful teas in any collection, and this version earns its place with something more than just the removal of caffeine. The secret lies in when that removal happens. These leaves are decaffeinated at the green leaf stage — before withering, before rolling, before any oxidation takes place — which means the full black tea character develops afterwards, just as it would in any high quality Irish breakfast blend. The result is a cup that genuinely tastes like Irish breakfast tea: malty, full-bodied, gold-red in the cup, and entirely capable of standing up to a good splash of milk.
Irish breakfast tea has a long and well-loved history, rooted in the bold, high-grown Assam teas that became synonymous with Irish tea culture from the mid-nineteenth century onwards. Always defined by its strength and its willingness to be the anchor of the day, the Irish breakfast style is notably more malty and full-bodied than its English counterpart — a reflection of the Assam-forward blending approach that Irish tea drinkers have favoured for generations. Decaffeinating a blend of this character without stripping the life from it is no small challenge, and treating the leaf before processing is the approach most likely to preserve what makes the blend worth drinking in the first place.

Brewing Note: Use freshly boiled water and allow the pyramid bag to sit for 3 to 4 minutes, depending on how strong you prefer your cup. The generous size of the pyramid bag is there for a reason — give it the full time to work, and resist the temptation to squeeze the bag when you remove it, as this can release tannins and tip the cup towards bitterness. This is a tea built to take milk, and it does so beautifully: add a splash after the bag is removed for a rounded, malty brew. If you prefer your tea black, a slightly shorter steep of around 3 minutes will keep it smooth and full-flavoured without any edge.
