Ginger loose leaf herbal infusion is one of the most straightforward and rewarding cups in the entire High Teas London range — pure dried ginger pieces, nothing else, brewed into a bold, naturally caffeine free herbal tea with a clean, warming character and a distinctly refreshing finish. When the ingredient is this good, nothing else is needed.
Ginger — Zingiber officinale — has one of the longest and most widely documented histories of any plant used in food and drink. Originating in South and Southeast Asia, it has been valued for thousands of years across Chinese, Ayurvedic, and later European traditions, prized both for its vivid, spicy flavour and its long association with digestive comfort and general wellbeing. By the time of the Roman Empire, dried ginger root was already a traded commodity moving along established spice routes from Asia into Europe — and it has remained a fixture of kitchens and herbal cabinets ever since.
The ginger used in this infusion is carefully dried to preserve the natural oils and compounds that give the root its characteristic heat and aroma. The result in the cup is a bright amber infusion with a bold, immediate warmth, a clean spicy edge, and a gently sweet, earthy finish that makes each sip feel both invigorating and comforting. Brewing Note: Use freshly boiled water at 100°C — ginger pieces are robust and benefit from full heat to release their natural oils and spice. Use one heaped teaspoon per cup and steep for 5 to 8 minutes depending on how bold you like your brew; a longer steep will draw out more heat and depth. Cover your cup while it steeps to hold the warmth in. The infusion can easily take a second pour over the same pieces, particularly if you are adding lemon and honey, where the slightly lighter second cup works beautifully. For a cold-weather warming drink, try it with a thin slice of fresh lemon pressed against the side of the mug.
