Some teas call for quiet contemplation. Others call for a slice of something from the cake stand. Green Tea with Chocolate Cake, Pear & Ginger is firmly in the latter camp — a flavoured loose leaf green tea that captures the warmth and comfort of a freshly baked dessert in every cup, without a single calorie of guilt.
The foundation is a high quality green tea, lightly grassy and clean, providing the kind of gentle base that lets the other ingredients settle into something genuinely layered rather than simply sweet. Into this goes cocoa peel, which contributes a soft, rounded chocolate note without any heaviness; freeze-dried pear and pear pieces, which bring a natural fruitiness and pleasing depth; and two forms of ginger — ginger pieces and sugar-crystallised ginger cubes — which together add a warming lift and a lightly spiced finish.
The result is a cup that builds beautifully from the first sip. Ripe pear comes first, sweet and clean; the cocoa follows through the middle, soft and grounding; and the ginger closes things with just enough warmth to stop this from ever feeling cloying. It is a tea with real character — one that rewards a slow, unhurried brew.
This blend works particularly well as a cold brew too. Left to infuse overnight in cold water, it produces a smooth, refreshing iced tea with the same layered flavours in a lighter, cleaner form — a lovely alternative in warmer months.

Ingredients: Green tea (50%), cocoa peel, ginger cubes (sugar, ginger, citric acid), pear pieces, ginger pieces, flavouring, freeze-dried pear pieces.
Brewing Note: Green tea is at its best brewed with water that is hot but not boiling — around 80°C is ideal here. Boiling water can scorch the delicate green tea leaves and introduce a bitterness that masks the pear and cocoa. Allow the leaves to steep for 3 to 4 minutes and taste as you go; a little longer draws out more of the ginger warmth, while a shorter steep keeps the pear and green tea notes brighter and fresher. Use one heaped teaspoon per cup. For a cold brew, place a generous measure in cold water and refrigerate overnight, then strain in the morning for a clean, smooth iced version that retains all the character of the hot cup.
