Brewing Note: Use freshly boiled water at 100°C and steep the pyramid bag for 5 to 7 minutes — longer than you might brew a standard black tea, but the boiling water and extended steep time are what bring the ginger root and lemon peel to life properly. Cover the cup while it brews to hold in the volatile citrus oils and keep the infusion hot. Remove the bag when you are happy with the strength and enjoy as it is, or stir in a teaspoon of honey if you prefer a touch of sweetness. This infusion also makes an excellent cold brew: place a bag in cold water and refrigerate for 6 to 8 hours for a bright, refreshing chilled drink.
