How to Brew Masala Chai Loose Leaf Tea
Use around 3g of tea per cup and freshly boiled water at 100°C. Steep for 4 to 5 minutes to allow the black tea and spices to open fully.
For a chai latte, strain the brewed tea over warm steamed or frothed milk in roughly equal parts. For a richer, more traditional style, simmer the tea with a mixture of water and milk on the hob for 3 to 4 minutes, then strain before serving. Honey or a little sugar can be added if preferred.
