How to Brew Cochin Masala Chai
For the most authentic cup, combine equal parts cold water and whole milk in a small saucepan. Add one heaped teaspoon per cup, bring gently to a simmer and allow to cook for 3 to 5 minutes, stirring occasionally. Sweeten to taste, then strain into the cup.
For a simpler infusion, use freshly boiled water at 100°C, steep for 4 to 5 minutes, then add hot milk and sugar if desired.
