Happy Valley is one of Darjeeling’s most storied tea gardens, founded in the nineteenth century and situated high in the Himalayan hills near the town of Darjeeling itself. How to Brew Happy Valley Organic Darjeeling

Use water at around 90°C to 95°C and add one heaped teaspoon per cup. Steep for 3 to 4 minutes.

A 3-minute brew gives a brighter, more floral cup. A 4-minute infusion brings out greater body and the fuller muscatel side of the blend.

Serve without milk to preserve the tea’s aromatic detail. It can also be cold brewed for 6 to 8 hours in the fridge for a light, elegant iced Darjeeling.

This is a great tea, stronger and more distinctive tasting than some others, but I do use a full teaspoon of the leaves and brew for 4 minutes.
