Organic Chinese Sencha is one of the most widely appreciated organic loose leaf green teas available — clean, gently grassy, and naturally sweet in a way that sets it apart from sharper or more astringent green teas. Grown without synthetic pesticides or fertilisers, this organic sencha offers a pure, honest expression of the green tea leaf at its most approachable.
The word 'sencha' translates simply as 'infused tea', and while the style is most commonly associated with Japan, China has a long tradition of producing sencha-style green teas of its own. Chinese sencha follows a subtly different path in the processing room: the leaves are shaped by folding them lengthwise during drying, then gently heated in pans to halt oxidation and preserve their vibrant colour. This careful process results in long, well-formed leaves with a slightly rounded, softer character — more gently sweet than vegetal, and notably smooth in the cup.
The infusion itself is a bright yellow, almost chartreuse in colour — clear and inviting — with a flavour that balances light grassiness with a fine natural sweetness. It is a tea that needs nothing added; it is complete and satisfying as it is. Organically grown leaves bring an added purity to the experience, with nothing to obscure the tea's own honest, refreshing quality.

Ingredients: Organic green tea (Camellia sinensis).
Brewing Note: Chinese sencha is a delicate leaf and responds best to water that has cooled a little after boiling — aim for around 75 to 80°C. Water that is too hot will draw out bitterness and work against the tea's naturally sweet character, so it is worth the brief wait. Use one heaped teaspoon per cup and steep for two to three minutes, adjusting to taste. The leaves will easily give a second infusion with a slightly lighter and more delicate result; simply add an extra minute to the steep time. This tea also makes an excellent cold brew: add the leaves to cold filtered water and leave in the fridge for six to eight hours for a smooth, clean, naturally refreshing iced green tea.
