There are certain flavours that are immediately, unmistakably festive — and toasted almonds sold warm from a paper cone at a Christmas market is one of them. This loose leaf fruit infusion captures that feeling exactly. It is the kind of cup that makes a cold evening feel like an occasion.

The blend is built on a base of sweet apple pieces, which provide a naturally gentle fruitiness without any sharpness or acidity. Almonds at ten percent give the infusion its defining character — toasted, caramelised, and richly nutty, with none of the bitterness that can sometimes accompany nut-based flavours. Beetroot lends the liquor its striking deep rose-red colour and adds an earthy undertone that grounds the sweetness beautifully. Cinnamon pieces and rosehip shells round the blend out, the cinnamon bringing warmth and gentle spice, the rosehip adding a subtle floral lift and a soft natural tartness that keeps everything balanced. Natural flavouring ties it all together.

Ingredients: Apple pieces, almonds (10%), beetroot, cinnamon pieces, rosehip shells, natural flavouring. 

Brewing Note: Use freshly boiled water at 100°C and allow around two heaping teaspoons per cup. Steep for a full 8 to 10 minutes — the blend needs a little time to release the full depth of the almond flavour, and a shorter steep will leave the cup tasting thinner and lighter than it should. The colour will deepen as it brews, moving from pale pink to a rich, warm red. For a cold brew version, add the same quantity of leaf to cold water and leave in the fridge overnight; the result is a surprisingly refreshing drink that works well served over ice in warmer months.
