How to Brew Traditional Indian Chai

For the classic method, combine the loose leaf blend with cold water and cold milk in roughly equal parts in a small saucepan. Bring slowly towards the boil, then simmer gently for 4 to 5 minutes, stirring occasionally. Strain into the cup and sweeten to taste.

For a simpler infusion, use freshly boiled water at 100°C, add one heaped teaspoon per cup and steep for 4 to 5 minutes. Finish with hot milk.

Use a little extra leaf if you like your chai particularly bold.
