Pai Mu Tan, also known as White Peony, is one of China’s most admired white teas. More expressive than the pure bud style of Silver Needle, yet still wonderfully gentle, it offers a graceful balance of delicacy, flavour and everyday drinkability.
The tea is made from a classic white tea pluck of one bud and two young leaves, giving it a beautifully natural appearance and a cup with subtle depth rather than simple lightness.
Delicate, Fruity and Naturally Sweet
In the cup, this White Peony loose leaf white tea brews to a pale golden-green liquor with luminous clarity and a soft floral aroma. The flavour is smooth and gently layered, with notes of fresh melon, orchard blossom and quiet natural sweetness.

Spring-Plucked Da Bai White Tea

How to Brew Pai Mu Tan White Peony
Use water heated to around 80°C to 85°C and add one heaped teaspoon per cup. Steep for 3 to 4 minutes for the first infusion.
The leaves will comfortably give one or two further steepings, each slightly lighter and more delicate than the last. Brewing in a glass cup or teapot is especially rewarding, as the pale buds and leaves unfurl beautifully in the water.

Being a fairly recent convert to white tea, I have yet to taste one better than Pai Mu Tan. Please keep it in your list.
