Green rooibos is the unfermented counterpart to the familiar red rooibos of South Africa — and for those who know only the deeper, earthier character of the red variety, it comes as something of a revelation. While red rooibos undergoes a natural process of fermentation and oxidation that gives it its warm amber colour and robust character, green rooibos is harvested and carefully dried before any oxidation can take place. The result is something altogether lighter: a fresher, more delicate infusion that preserves the plant's natural colour, retains a higher concentration of its naturally occurring antioxidants, and delivers a noticeably brighter, cleaner cup.
This is an organically grown variety, cultivated in the Cederberg mountain region of South Africa's Western Cape — the only place on earth where the Aspalathus linearis plant grows naturally. The rugged landscape, poor acidic soils, and hot, dry summers create conditions that have shaped rooibos for centuries, and organic cultivation here means no synthetic pesticides or fertilisers interfere with that natural, unhurried character.
The infusion pours a beautiful pale gold, with a clean clarity that sets it immediately apart from the deeper amber of red rooibos. On the palate it is smooth and gently sweet, with a soft grassy freshness, a faint honeyed warmth, and a subtly tangy finish. It is naturally free from bitterness and remarkably easy to drink — approachable for those new to rooibos, and quietly interesting for those who already know it well. Naturally caffeine free, it is a tea that fits any moment in the day with equal ease.

Brewing Note: Green rooibos is more forgiving than many teas, but a little care brings out the best of its character. Use freshly boiled water at 100°C — the full boil suits this infusion well — and steep for 5 to 7 minutes. A shorter steep of around 4 minutes gives a lighter, more delicate result; leaving it a little longer deepens the flavour without introducing any bitterness, which makes it a particularly easy and relaxed tea to work with. Green rooibos also cold brews beautifully: add a generous measure to cold water and leave in the fridge for 6 to 8 hours for a naturally sweet, refreshing iced infusion that needs no sweetening at all.
