The Teamaker at the Hatidubi Tea Factory from the Golaghat District surprised us with one in our view felicitous experiment: Probably the first in Assam produced smoke tea!Fu Soonga is a very popular Assamese way of cooking this young green bamboo tubes are filled with food or yogurt and cooked over an open fire or on hot plates.Fu means blow and Soonga means pipe.The idea was to blow well over these bamboo pipes during production smoke from wild woods in the sheet.The result can be tasted: a soft aromatic Assam tea with a slight smokiness balanced.
