Ireland ranks among the highest per-capita tea-drinking nations on earth, and generations of that tradition have shaped a style of breakfast tea that is unmistakably stronger and more full-bodied than its English counterpart. The key lies in the ratio: Irish Breakfast is heavily weighted towards Assam, with the Kenyan component adding brightness and floral complexity without diluting the essential character of the cup.

The Assam in this blend is drawn from the second flush harvest, gathered during the period of peak growth when the leaf produces its characteristic deep maltiness, rich body, and satisfying mouth-coating warmth. The Kenyan teas are selected from the finest seasonal harvests, chosen for the bright, coppery colour and floral depth they bring to the infusion. Brewing Note: Irish Breakfast brews best with freshly boiled water at a full rolling boil — this is not a tea that benefits from a lower temperature. Pre-warm your mug first, place the pyramid bag inside, and pour directly over the bag. Steep for three to five minutes depending on how strong you prefer your cup; longer steeping increases both strength and astringency, so find the point that suits you.
